Memorial Day Ice Cream Cake

This easy ice cream cake is not only delicious, but also shows off your patriotic side with a touch of red, white and blue!

Ingredients:

1 baked & cooled 9” or 10” round white cake
1 tub of blueberry or strawberry swirl ice cream, slightly softened
Whipped Cream
Fresh Strawberries and Blueberries
Strawberry Sundae Sauce
Directions: Bake your cake and allow to cool completely. Line a tall, spring form 9” or 10” pan with parchment paper. Slice your cake crosswise to make two thin layers. Place the first layer in the bottom of the pan. Add a layer
of softened ice cream about 2” thick. Cover with sliced strawberries. Add the second layer of cake and then wrap well with foil or saran wrap and place in the freezer overnight, or at least four hours to firm up.

Remove the frozen cake from the spring form pan just before serving and cover with fresh whipped cream or whipped topping and whole blueberries and strawberries. Serve with strawberry sauce on the side. You can use any flavor of ice cream or cake to switch up your ice cream cake to suit any occassion.
